JERK CHICKEN NACHOS – RECIPE

I had quite a few people ask for the JERK CHICKEN NACHOS recipe!

You will need the following:

6 cups tortilla chips

3 cups diced cooked chicken

2 cups shredded cheese – your choice

2 TBSP Jamaican jerk rub – I got a Caribbean rub at wal*mart in the spices!

1 yellow or red pepper

1 lime

2 TBSP snipped fresh cilantro

OPTIONAL – 1/4 cup sour cream and 1 TSP jerk rub

1. preheat oven to 425

2. arrange tortilla chips in an overlapping pattern on the large round stone

3. in bowl – combine chicken – cheese – and 1 TBSP jerk rub

4. sprinkle combo over the nachos evenly – bake 7 to 10 min until cheese is melted

5. dice the pepper – put in bowl – cut lime in half and juice over pepper cubes – add remaining jerk rub

6. mince cilantro

7. slice remaining lime half into garnish

8. spoon pepper mix over nachos – sprinkle with cilantro

9. OPTIONAL – combine sour cream and rub in plastic bag – trim corner to allow sour cream to flow through

10. pipe sour cream mixture over nachos

11. garnish with lime slices
